Slovak bakers will monitor acrylamide in their products

Slovak bakers will monitor acrylamide content in their products following the European Commission's special directive aimed at reducing the content of acrylamide in food products to a minimum. They consider the regulation a good step. Acrylamide is known to give food a typical flavour, aroma, or appearance and it can be found in many products from potato chips, bread and biscuits to coffee. Studies in rodents showed that it may potentially increase the risk of developing cancer for consumers in all age groups.
